In preparation for Hurricane Sandy, my family had stocked up on all things necessary for the end of the world. I think we are good (but if you don’t hear from me for a while, you know why).
Despite the stormy weather, my fall spirit is still very… spirited, if you will. One of my favorite fall recipes is this Apple Oatmeal Crumble, because it is such a versatile dish. Whether it be breakfast, lunch, or dinner, it’s the perfect addition to every meal. It doesn’t require a lot of difficult ingredients, and is as easy as 1,2,3.
All you need is:
- 5 (or so) apples
- a handful of Fresh Cranberries
- 2 eggs
- 3 packages of oatmeal
- one scoop of raisins
- a tiny bit of nutmeg and cinnamon
- a handful of chopped walnuts
- a sprinkle of brown sugar and sugar
Start by pre-heating the oven to 350 degrees.
Begin by chopping the apples and putting them in the dish you wish to bake in. Add in cranberries if desired.
In a separate bowl, combine oatmeal, eggs, raisins, walnuts, sugar, brown sugar, nutmeg and cinnamon. Mix until all ingredients are thoroughly coated with egg.
Pop your dish in the oven for 40 minutes (or until golden brown) and viola! Just get a fork and you’re good to go!
